  Eggplant Parmesan:
Cut the eggplant into thin slices, dredge in flour and fry them. When ready let them aside. Prepare tomato sauce with tomatoes, olive oil, garlic and chili pepper, cook for about 15 minutes. Grate plenty of Parmesan cheese and chop some basil. Place eggplant Parmesan in a baking pan: one eggplant layer, a tablespoon of tomato sauce, Parmesan cheese, repeat operation with about 5 layers. Sparkle a good amount of Parmesan cheese on the top and bake for about 7/8 minutes at 200 C. Serve. You can also add seared shrimp if you like.
